It's the month for Valentine's....hearts, flowers, candy and love. You'll see them everywhere. So how about some surprisingly simple, sinfully delicious, yet VERY low-fat sweets for you sweet? That's what you'll find here this month. Enjoy!

Maraschino Cherry Cake with Cream Sauce

Cake ingredients:
1 (10-ounce) jar maraschino cherries
2 Tablespoons applesauce
6 egg whites
1 (18.25-ounce) box reduced-fat yellow cake mix - dry

Cream sauce ingredients:
1 pint fat-free half & half
1 (4.6-ounce) box vanilla cook & serve pudding and pie filling mix - dry

Preheat oven to 350º. Spray three 8-inch round cake pans with non-fat cooking spray. Set aside. Drain juice from maraschino cherries into a measuring cup. Add enough water to the juice to measure 1 cup. Set the cherries aside. In a medium bowl, mix together juice/water, applesauce and
egg whites until well blended. Stir in cake mix. Scraping bowl constantly, stir for 2 minutes. Divide the cherries evenly among the bottoms of the prepared pans. Pour batter over cherries in pans. Bake for 20 to 25 minutes. (cakes are done when a toothpick inserted in center comes out clean)

In the meantime, while cakes are baking, prepare cream sauce in a 2-quart non-stick saucepan. Cook the half & half with the dry pudding mix over medium heat, stirring constantly, until mixture comes to a full boil. Remove from the heat and let sit until the cakes are finished baking. Once the cakes are completely baked, carefully cut (steak knives work well here) each cake into 8 pieces. Place each serving on an individual dessert plate. Put a dab of the warm cream sauce on top of each serving, allowing the sauce to ooze down the side. Serve warm. Makes 24 servings.

Now for the good part....this cake has only 132 calories per serving, with only 3% of those calories from fat. Eat heart smart!

Cappuccino Cookies

1 (18.25-ounce) box reduced-fat devil's food cake mix - dry
1 Tablespoon instant coffee
1 teaspoon ground cinnamon
3/4 cup skim milk
2 (4-ounce) containers Egg Beaters® (or 8 egg whites)

Preheat oven to 400º. Spray cookie sheets with non-fat cooking spray and set aside. Mix all ingredients together with a spatula until well blended. Drop by rounded heaping teaspoonfuls onto prepared cookies sheets and bake for 5 minutes or until centers are set. Makes 48 cookies.

Ready? 47 calories per serving, with only 17% from fat. Recommended dietary guidelines are less than 30% fat per serving...so pig out!

Orange Sugar Cookies

Cookie ingredients:
1/3 cup plus 1 Tablespoon orange juice
1 cup reduced-fat Bisquick® baking mix
1/4 cup sugar
1 teaspoon orange extract

Frosting ingredients:
2 Tablespoons reduced-fat prepared vanilla frosting
2 drops orange extract

Preheat oven to 400º. Spray cookie sheets with non-fat cooking spray and set aside. Mix all cookie ingredients together in a medium bowl until well mixed. Drop by rounded teaspoonfuls onto prepared cookie sheets. Bake for 4 minutes or until bottoms are light golden brown. While the cookies are baking, microwave frosting for 15 seconds, just enough to melt. Stir in orange extract. Drizzle frosting over warm, baked cookies. Makes 24 cookies.

These cookies pack quite a bit of flavor for only 35 calories each, and 0% from fat!
