o/~ Summertime and the livin' is easy o/~
At least that's what the song says! It's time to be outdoors, have picnics, grill at the beach! What better way than with super simple recipes for outdoor dining. Enjoy!



Super Easy Baked Beans

60 ounces canned beans w/pork in tomato sauce
2 slices bacon, chopped
1 onion, chopped
3/4 cup brown sugar
1/2 cup ketchup
2 Tablespoons mustard

Preheat oven to 300º.

Cook bacon until crisp, then set aside to drain. Chop when cool enough to handle. Cook onion in bacon grease until just beginning to turn golden. Combine all ingredients in a 2 quart casserole dish. Bake 1 hour (You can also cook on top of the stove until hot, but the flavors won't be as mellow.) Serves 8

Grilled Corn

6 Tablespoons butter, softened
1 teaspoon salt
1 teaspoon pepper
6 ears of corn, husked and cleaned

Preheat grill for medium heat.

Place each ear of corn on a 13x12-inch piece of heavy-duty aluminum foil. Brush each ear of corn with 1 Tablespoon of butter. Sprinkle with salt and pepper as desired. Wrap each ear loosely, but seal well. Grill 15-20 minutes, or until as tender as you like it. Unwrap very carefully and enjoy!

Margarita Pie

10 ounces pretzels, crushed
1/4 cup sugar
2/3 cup butter, melted
14 ounces sweetened condensed milk
1/4 cup lime juice
1/4 cup tequila

4 Tablespoons orange juice or Triple Sec
1 cup strawberries, chopped
1 cup heavy cream

Mix crushed pretzels, sugar, and butter and press into the bottom and up the sides of a 9-inch pie pan. Chop strawberries and allow sit on paper towels to absorb excess juices. Whip the cream. Mix sweetened condensed milk, lime juice, tequila, orange juice (or Triple Sec). Divide the mixture between 2 bowls. Add strawberries and a few drops of red food coloring to one bowl, and stir well. Fold in 1 cup whipped cream. Mix a few drops of yellow food coloring into the other bowl, and fold in the remaining whipped cream. Spoon into crust, alternating colors as you like. Freeze for at least 4 hours.
